- 2 large Roman tomatoes , cored, seeded, and finely chopped
- 2 green onions , finely chopped
- 100 ml Vinegar , such as rice, apple cider vinegar, red wine, or white vinegar (try not to use dark vinegar like balsamic vinegar because it would alter the appearance of the dish)
- 100 ml extra virgin olive oil
- 50 ml water
- ½ tablespoon Oregano , fresh or dry, to taste
- ½ teaspoon red pepper flakes , to taste
- ½ teaspoon ground black pepper , to taste
- 1 teaspoon Kosher Salt , to taste
- 1 handful fresh flat-leaf or curly parsley , chopped
- 1 bunch basil , chopped, optional
