How to Make Chipotle Tomatillo Salsa

In a large skillet over medium heat, lightly toast the chiles de arbol and guajillo chili, being careful not to burn them, as this will make the salsa bitter. Set the toasted chiles aside.
In a medium pot, add 8 cups of water and bring it to a boil. Add the tomatillos, 2 garlic cloves, onion, toasted chiles de arbol, and guajillo chili to the pot. Reduce the heat to medium and let the ingredients simmer for 10-15 minutes or until the tomatillos are soft and turn yellow. Remove the pot from the heat and use a slotted spoon to remove the tomatillos, garlic, onion, and chilies from the water. Let it cool.
Transfer the mixture to a blender or food processor. Add the salt, canned chipotle pepper, and cilantro and blend until the mixture is smooth and well combined. Taste the salsa and adjust the seasoning as needed, adding more salt or canned chipotle pepper to your liking. Serve the salsa immediately or transfer it to an airtight container and refrigerate until ready to use.
