  • Heavy cream: Creates a smooth, rich base and gives the sauce its creamy texture.
  • Unsalted butter: Adds richness and helps the sauce stay silky and glossy.
  • Light corn syrup: Improves shine and prevents the chocolate from crystallizing, keeping the sauce smooth.
  • Bittersweet chocolate (such as Ghirardelli): Provides deep chocolate flavor and structure.It can be substituted with semisweet chocolate for a sweeter sauce.
  • Vanilla extract: Enhances the chocolate flavor.
  • Salt: Balances sweetness and intensifies the chocolate taste.

How to Make Salsa de Chocolate

  1. In a small saucepan, combine the cream, butter, and corn syrup. Heat over medium heat until just beginning to simmer.
  2. Remove from the heat and add the chocolate. Let sit for 2 minutes, then whisk until smooth and glossy. Whisk in the vanilla and salt. serve warm.

Hint: Do not boil the cream; overheating can cause the chocolate to seize or turn grainy.

Storage, Make Ahead, & Freezing

Storage: Let the chocolate sauce cool completely, then store it in an airtight container in the refrigerator for up to 5 days.

Make Ahead: This sauce can be made in advance and refrigerated. Reheat gently before serving, stirring until smooth.

Freezing: Freezing is not recommended.

  • Use good-quality chocolate: The sauce's flavor depends on the chocolate you use. I personally love Ghirardelli bittersweet chocolate for its deep, balanced flavor.
  • Don't boil the cream: Heat just until steaming to keep the sauce smooth and prevent graininess.
  • Adjust sweetness: Use semisweet chocolate for a sweeter sauce, or bittersweet for a deeper chocolate flavor.
  • Consistency: Whisk in a splash of warm cream or milk to thin the sauce, or let it cool slightly to thicken.
  • Coffee liqueur boost: Adding 1 tablespoon of coffee liqueur at the end of cooking enhances the chocolate flavor and adds subtle richness without overpowering it. If unavailable, use 1 teaspoon instant espresso powder or instant coffee (such as Nescafé Dark Roast) dissolved in the hot cream, or 1 tablespoon strong brewed coffee for a similar depth.
  • Flavor variations: Try Grand Marnier for a hint of orange, Amaretto for almond flavor, or Frangelico for a touch of hazelnut.
