How to Make Mediterranean Scrambled Eggs

Heat 2 tablespoons oil in a "20-inch nonstick skillet over medium-high heat. Add onions and salt; cook until tender and translucent. Move the cooked onions to one side of the pan. Pour the beaten eggs on the other side of the pan; cook and stir until it is cooked through.

Stir with a wooden spatula, chopping the egg into bite-sized pieces. Turn to the lowest heat, and stir to combine the egg with the cooked onions. Move everything to one side of the pan. Add the remaining 2 tablespoons of oil to the empty side of the pan; add the garlic and turn back to medium-high heat.

Stir the garlic a few times until fragrant. Add tomato, basil, olives, and red pepper flakes, and sprinkle the sugar on top; stir-fry until the tomato edges are slightly charred, and the texture becomes a bit soft, about 1 minute.

Add feta cheese to the Mediterranean Scrambled eggs; stir and toss everything until evenly combined. Serve alongside tortilla chips or over white rice, or make a delicious sandwich wrap. Enjoy the Mediterranean Scrambled Eggs!

    • 5 stuffed Spanish queen olives , thinly sliced
    • ¼ cup Feta cheese , crumble up

    Instructions
