Easy Mediterranean Scrambled eggs
Ingredients
- 4 Tablespoons extra virgin olive oil , olive oil, canola oil, or butter, divided
- 10 eggs , beaten
- 5 tomatoes , chopped
- 1 large onion , chopped
- 3 cloves garlic , chopped
- 1 teaspoon kosher salt
- 1 teaspoon granulated sugar
- 1 teaspoon red pepper flakes
- 1 bunch fresh basil , chopped or green onion
- 5 stuffed Spanish queen olives , thinly sliced
- ¼ cup Feta cheese , crumble up
Instructions
- Heat 2 tablespoons oil in a "20-inch nonstick skillet over medium-high heat. Add onions and salt; cook until tender and translucent. Move the cooked onions to one side of the pan. Pour the beaten eggs on the other side of the pan; cook and stir until it is cooked through. Stir with a wooden spatula, chopping the egg into bite-sized pieces.
- Turn to the lowest heat, and stir to combine the egg with the cooked onions. Move everything to one side of the pan. Add the remaining 2 tablespoons of oil to the empty side of the pan; add the garlic and turn back to medium-high heat. Stir the garlic a few times until fragrant.
- Add tomato, basil, olives, and red pepper flakes, and sprinkle the sugar on top; stir-fry until the tomato edges are slightly charred and the texture becomes a bit soft, about 1 minute. Add feta cheese; stir and toss everything until evenly combined. Serve alongside tortillas chips or over white rice, or make a delicious sandwich wrap.
