What is Sopa Paraguaya?

Sopa Paraguaya is a savory cornbread, a staple in Paraguayan cuisine. Made with Harina Paraguaya (corn flour), queso Paraguay (cheese), milk, eggs, and sometimes onions or anise. It has a dry, compact texture and crispy edges.

Although traditionally baked in a Tatakua-a handmade clay or brick oven used in rural Paraguay-it can also be made in a regular oven.

What is Chipa Guazu?

Chipa Guazú is a corn casserole, a traditional Paraguayan dish. It is made with freshly ground corn kernels, queso Paraguay (cheese), milk, eggs, and sometimes onions.

It has a moist and creamy texture and crispy edges. Like Sopa Paraguaya, it can be baked in either a Tatakua or a regular oven.

commonly known as Harina Paraguaya, giving it a denser and drier texture akin to cornbread. On the other hand, Chipa Guazú uses ground fresh corn kernels, resulting in a creamier and moister texture, similar to a corn casserole, due to the moisture from the corn kernels.
