How to Make Spicy Sweet Chili Sauce

Add all the ingredients except the cornstarch to a blender and blend until smooth. Add the mixture to a medium nonstick pan over medium-high heat and bring it to a boil, stirring constantly.
Next, turn to medium heat and cook for 5 more minutes, stirring constantly. Then, turn to medium-low heat.
In a small bowl, mix the cornstarch with two tablespoons of water until fully dissolved. Pour the mixture into the pan and simmer, occasionally stirring, until the sauce is thickened about 1 to 2 minutes.
Keep in mind that the sauce will thicken further once it cools.
Taste the sauce and adjust the taste by adding more sugar if it is not sweet enough or more vinegar if it is not sour enough. Suppose the Spicy Sweet Chili Sauce turns out too thick; mix in a few spoons of water to thin it out while it’s still hot.

Ingredients
- ½ cup rice vinegar
- ⅔ cup light brown sugar or granulated sugar , to taste
- ½ cup plus 2 tablespoons water , divided
- 2 tablespoons Shaoxing wine or dry sherry
- 1 tablespoon soy sauce
- 5 Thai Bird’s eye chili peppers , seeded and minced or 2 tablespoons crushed red pepper flakes
- 2 tablespoons Sambal Oelek chili paste , to taste
- 5 garlic cloves , minced
- 1 tablespoon ginger , minced
- 1 tablespoon cornstarch
