Easy Spicy Sweet Chili Sauce

Here's a delicious and easy Homemade Spicy Sweet Chili Sauce recipe that's not only is it a great dipping sauce, but you can also use as an ingredient to cook delicious stir-fry as well.

Ingredients
  

  • ½ cup rice vinegar
  • cup light brown sugar or granulated sugar , to taste
  • ½ cup plus 2 tablespoons water , divided
  • 2 tablespoons Shaoxing wine or dry sherry
  • 1 tablespoon soy sauce
  • 5 Thai Bird’s eye chili peppers , seeded and minced or 2 tablespoons crushed red pepper flakes
  • 2 tablespoons Sambal Oelek chili paste , to taste
  • 5 garlic cloves , minced
  • 1 tablespoon ginger , minced
  • 1 tablespoon cornstarch

Instructions
 

  • In a blender, add all the ingredients except the cornstarch and blend until smooth.
  • In a medium nonstick pan over medium-high heat, add the mixture and bring it to a boil, stirring constantly. Next, turn to medium heat and cook for 5 more minutes, stirring constantly. Then, turn to medium-low heat.
  • In a small bowl, mix the cornstarch with two tablespoons of water until fully dissolved; pour into the pan, and simmer, occasionally stirring, until the sauce is thickened, about 1 to 2 minutes. keep in mind that the sauce will further thicken once it cools.
  • Taste the sauce and adjust the taste by adding more sugar if not sweet enough or more vinegar if not sour enough. If the Spicy Sweet Chili Sauce turns out too thick, mix in a few spoons of water to thin it out while it’s still hot.
  • Pour the Spicy Sweet Chili Sauce into a bowl and let sit until thoroughly cooled. Serve it as a dipping sauce or store it in an airtight jar in the fridge for up to 5 days.

How to Store & Re-Heat
To store: Allow it to cool completely before transferring it to an airtight container and refrigerating it. It will keep well in the refrigerator for up to two weeks. Then, when you're ready to use it, take it out of the fridge and let it come to room temperature before using it. You can either reheat the sauce on the stove or in the microwave.
To reheat: If using the stove, place the sauce in a small saucepan and heat it over low heat, occasionally stirring, until it is heated. If using the microwave, transfer the sauce to a microwave-safe container and heat it in 15-second increments, stirring in between each increment, until it is heated through. It's important to note that the consistency of the sauce may change slightly after it has been refrigerated and reheated. If it has thickened too much, you can add a small amount of water to thin it out.
Make-Ahead
Spicy Sweet Chili Sauce can be made and stored in the fridge until you're ready to use it. Allowing the sauce to sit for a day or two can enhance its flavor. To make it ahead, follow the recipe as instructed and allow the sauce to cool completely before transferring it to an airtight container and refrigerating it. It will be kept well in the refrigerator for up to two weeks.
When ready to use the sauce, please remove it from the fridge and let it come to room temperature. You may find that the sauce has thickened slightly in the fridge, but this can easily be remedied by stirring in a small amount of water to thin it out. Once the sauce reaches the desired consistency, use it as you usually would. Making the sauce can be a great time-saver for planning a meal or event. It allows you to focus on other aspects of the meal preparation while ensuring you have a delicious and flavorful sauce on hand when needed.
