How to Make Sweet Peas and Ham

Heat the extra virgin olive oil in a medium (10-inch) sauté pan, add the ham and red onion, and cook over medium heat for 5 to 7 minutes, occasionally stirring, until the ham is heated through and the onion is tender.

Add the frozen peas, ¼ teaspoon kosher salt, and ¼ teaspoon pepper, and cook over medium-low heat for 4 to 5 minutes until the peas are hot. Stir in the cilantro, taste for seasonings, and serve hot. Enjoy!

    Ingredients
      

    • 1 (12-ounce) sweet frozen peas
    • 100 g leftovers ham , ¼-inch-diced
    • 1 large red onion , halved and sliced
    • ¼ cup Cilantro , chopped
    • 1 tablespoon good extra virgin olive oil
    • ¼ teaspoon Kosher salt
    • ¼ teaspoon ground Indian red chili or ground black pepper

    Instructions
     

    • Heat the extra virgin olive oil in a medium (10-inch) sauté pan, add the ham and red onion, and cook over medium heat for 5 to 7 minutes, stirring occasionally, until the ham is heated through and the onion is tender.
    • Add the frozen peas, ¼ teaspoon kosher salt, and ¼ teaspoon pepper, and cook over medium-low heat for 4 to 5 minutes, until the peas are hot. Stir in the cilantro, taste for seasonings, and serve hot. Enjoy!

    Notes

    How to Store & Re-Heat
    • To store: Sweet Peas and Ham can be stored in an airtight container in the refrigerator for up to 3-4 days.
    • To reheat: You can use a microwave or stovetop to reheat the dish. If using a microwave, place the sweet peas and ham in a microwave-safe dish and heat on high for 1-2 minutes or until heated through. If using a stovetop, heat the sweet peas and ham in a skillet over medium heat until heated, stirring occasionally.
    Make-Ahead
    Sweet Peas and Ham can be made up to 2 days in advance and stored in an airtight container in the refrigerator until ready to serve. When ready to serve, reheat the dish in the microwave or stovetop until heated. Sweet Peas and Ham can also be frozen for up to 2 months. To freeze the dish, transfer it to a freezer-safe container or bag and label it with the date.
    When ready to serve, thaw the dish in the refrigerator overnight, then reheat it in the microwave or on the stovetop until heated through. The texture of the sweet peas may change slightly after freezing and reheating, so keep this in mind if you plan to freeze the dish. If you want to add fresh cilantro to the dish before serving, it's best to wait until just before serving to add it. This will ensure the cilantro stays fresh and doesn't wilt or become discolored during storage.
    How to Freeze
    Let the dish cool down to room temperature. This is important as hot or warm food can raise the temperature in the freezer and affect other frozen items. Transfer the Sweet Peas and Ham to a freezer-safe container or a zip-top freezer bag. Leave some space at the top of the container or bag to allow for expansion during freezing.
    Label the container or bag with the date and contents, so you know what's inside and when it was frozen. Place the container or bag in the freezer and freeze for up to 2 months. To thaw the Sweet Peas and Ham, transfer the container or bag to the refrigerator and let it thaw overnight. Alternatively, you can thaw it in the microwave using the defrost setting. Once thawed, reheat the Sweet Peas and Ham in a skillet over medium heat, occasionally stirring until heated.
