How to Make Skillet Lasagna

Heat the oil in a 14-inch skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon until browned, about 10 minutes. Add the onions, bell pepper, garlic, and fresh tomatoes and season with 1-½ teaspoons kosher salt, ½ teaspoon red pepper flakes, and ½ teaspoon ground black pepper and stir to combine.

Cook for 7 to 10 minutes, stirring until the vegetables become very soft and aromatic. Add ¾ cup wine, stirring to deglaze the bottom of the skillet for about 3 minutes. Scatter pasta over meat, but do not stir.

Pour Crushed tomatoes and 2 cups of water over the pasta cover and bring it to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until pasta is tender, about 20 minutes. Off heat, stir in ½ cup freshly grated grana Padano cheese or parmesan cheese.

Taste and adjust seasoning with kosher salt and pepper if needed. Dollop heaping tablespoons of ricotta cheese over the top, cover, and let it sit for 5 minutes to soften. Sprinkle fresh basil and reaming 2 tablespoons of Grana Padano cheese. Serve.

    Ingredients
      

    • 5 fresh plum tomatoes , diced
    • one 28 oz can crushed or diced tomatoes
    • 1 tablespoon extra virgin olive oil
    • 1 medium onion , finely diced
    • 1 red bell pepper or poblano pepper , finely chopped
    • 8 cloves garlic , minced
    • ½ teaspoon red pepper flakes (optional)
    • ½ teaspoon ground black pepper
    • 1-¼ teaspoons Kosher salt , adjust to taste
    • ½ cup torn basil
    • ¾ cup red wine such as Malbec or water
    • 2 cups water , as needed
    • 2 teaspoons sugar
    • 1 pound Italian sausage , casing removed or meatloaf mix
    • 10 curly-edged lasagna broken into 2-inch lengths
    • ½ cup plus 2 tablespoons freshly grated Grana Padano or Parmesan cheese
    • 8 ounces (1 cup) whole milk or part-skim ricotta

    Instructions
     

    • Heat the oil in a 14 -inch skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon until browned, about 10 minutes. Add the onions, bell pepper, garlic, and fresh tomatoes and season with 1-½ teaspoons kosher salt, ½ teaspoon red pepper flakes, and ½ teaspoon ground black pepper and stir to combine.     How to Store & Reheat
    To store skillet lasagna, first, allow it to cool to room temperature. Then, transfer it to an airtight container and place it in the refrigerator. It can be stored in the refrigerator for up to 3 days.
    To reheat skillet lasagna, you can use one of the following methods:
    Oven: Preheat your oven to 350°F (175°C). Place the skillet lasagna in an oven-safe dish and cover it with foil. Reheat it in the oven for 20-25 minutes or until it is heated through.
    Microwave: Place a portion of skillet lasagna in a microwave-safe dish and cover it with microwave-safe plastic wrap or a lid. Reheat it in the microwave for 2-3 minutes or until it is heated through.
    Stovetop: Place the skillet lasagna in a pan and heat it on medium heat, stirring occasionally, for 5-7 minutes or until it is heated through.
    It's important to note that if the skillet lasagna was frozen, it should be thawed completely before reheating. And always check the temperature of the lasagna with a food thermometer to ensure that it has been heated to at least 165°F (74°C) for safety.
    Reheating the skillet lasagna in the oven or on the stovetop will give the best texture, and reheating in the microwave will be the fastest method, but the texture will be different.
    How to Make Ahead
    Skillet lasagna can be made a day ahead. Here's how: Prepare the skillet lasagna as directed in the recipe, then allow it to cool to room temperature. Once cooled, transfer it to an airtight container and store it in the refrigerator for up to 3 days.
    When you are ready to serve the skillet lasagna, preheat the oven to 350°F (175°C) and bake it for 25-30 minutes or until it is heated through and the cheese is melted and bubbly. 
    How to Freeze
    Skillet lasagna can be frozen for up to 3 months. Here's how: Allow the skillet lasagna to cool completely. Then, transfer it to an airtight container or wrap it tightly with aluminum foil or plastic wrap. Label it with the name of the dish and the date and place it in the freezer. It can be frozen for up to 3 months.
    When you are ready to serve the skillet lasagna, remove it from the freezer and place it in the refrigerator to thaw overnight. Preheat the oven to 350°F (175°C) and bake it for 25-30 minutes or until it is heated through and the cheese is melted and bubbly.
    It's important to note that freezing and thawing can affect the texture of the dish, so it may not be as creamy or tender as it was when freshly made. But it still can be a great solution for a busy schedule and unexpected guests.
    It's also important to use proper containers or wraps to prevent freezer burn and to make sure the dish is well-sealed to maintain its taste and quality.
