It's a simple, creamy, and flavorful side dish that pairs well with asado, everyday dinners, and summer gatherings.

This ensalada de tomate recipe is my easiest go-to salad when I need something fast, fresh, and satisfying.

It uses basic ingredients, takes only minutes to prepare, and delivers a bright, tangy flavor that everyone loves.

It's so simple and tasty that it quickly becomes a family favorite.

How to Make Ensalada de Tomate

Start by washing and drying your tomatoes well, then slice them into even rounds or wedges so they hold their shape when mixed.

Thinly slice the onion and separate the layers to distribute the flavor evenly throughout the salad.

Place the tomatoes and onions in a large bowl. Add the mayonnaise, salt, and pepper. Squeeze the juice of 1 to 2 limes over the top.

Using a large spoon, gently toss the ingredients together, being careful not to mash the tomatoes. Keep mixing until every slice is lightly coated and the flavors are well combined.

Taste and adjust the seasoning with more salt, pepper, or lime juice if needed.

Serve immediately, or refrigerate for 10-15 minutes to let the flavors meld before serving.

Storage, Make Ahead, & Freezing

Storage: To store leftover Tomato Salad, transfer it to an airtight container or cover it tightly with plastic wrap.

Refrigerate for 2-3 days to maintain freshness and food safety. Keep in mind that tomatoes naturally release moisture, so the texture may soften over time.

Before serving leftovers, give the salad a gentle stir to redistribute the dressing and flavors.

Make Ahead: You can prep the tomatoes and onions a day in advance and store them separately in airtight containers in the refrigerator.

The dressing can also be mixed ahead of time and kept chilled until ready to use. For best results, add the dressing just before serving to maintain the freshest texture.

If assembling the salad a few hours ahead, cover it tightly and refrigerate.

Add delicate toppings-such as avocado or fresh herbs-right before serving to prevent discoloration or mushiness.

Freezing: Freezing is not recommended, as tomatoes lose their texture and become watery once thawed.
