This avocado popsicle recipe uses Hass avocado for its creamy texture and sweetened condensed milk to provide both sweetness and richness. The mixture is blended until completely smooth, poured into ice pop molds, and frozen for at least 8 hours.

Avocado popsicles are popular in several Latin American cuisines, where avocado is combined with milk and sugar to make creamy drinks, desserts, and frozen treats.

  • Hass avocado: Choose a ripe avocado that yields slightly when gently pressed. An underripe avocado will not blend as smoothly and may have a less developed flavor.
  • Whole milk: Thins the avocado mixture enough to blend and gives the popsicles a creamy consistency.
  • Sweetened condensed milk: Adds sweetness and richness while helping balance the avocado flavor.

How to Make Helado de Aguacate

  1. Blend the Mixture: Blend all the ingredients until completely smooth, stopping to scrape down the blender as needed so no pieces of avocado remain.
  2. Fill the Molds: Pour the mixture into the ice pop molds, leaving a little room at the top for the popsicles to expand as they freeze.
  3. Freeze Until Firm: Freeze overnight or for at least 8 hours, until the popsicles are completely solid.
  4. Release the Popsicles: Run the outside of the molds briefly under warm water, then gently wiggle each popsicle free without pulling forcefully on the stick.

Hint: Tap the filled molds gently against the counter before freezing. This helps release trapped air bubbles and allows the avocado mixture to settle evenly around the sticks.

Storage & Freezing

Storage: Keep the avocado popsicles in their molds or transfer them to an airtight freezer-safe container once completely frozen. Separate them with parchment paper to prevent sticking.

Freezing: Store for up to 2 months for the best flavor and texture.

Camila's Tips & Variations

  • The mixture is not completely smooth: Use a fully ripe Hass avocado and blend until no visible pieces remain. Stop and scrape down the sides of the blender as needed so everything blends evenly.
  • The popsicles are difficult to remove: Run only the outside of the molds under warm water for a few seconds, then gently wiggle the popsicles free. Avoid using too much warm water, which can begin melting the surface.
  • The sticks will not stay upright: Let the mixture partially freeze before inserting wooden sticks, unless your molds have fitted lids that hold them in place.
  • The popsicles are icy rather than creamy: Use whole milk and a fully ripe avocado, then blend the mixture until completely smooth. Lower-fat milk or an underripe avocado can produce a firmer, icier texture.
  • Add lime: Blend in a small amount of fresh lime juice for a brighter flavor that balances the sweetness.
  • Add coconut: Replace part of the whole milk with coconut milk for a light coconut flavor and a richer texture.

How do I know when an avocado is ripe enough for popsicles?

A ripe avocado should yield slightly under gentle pressure without feeling mushy. The flesh should be creamy and free from large brown or fibrous areas.

Why did my avocado popsicles turn slightly brown?

Avocado naturally darkens when exposed to air. Promptly blending and freezing the mixture helps limit discoloration, although a slight color change does not necessarily mean the popsicles have spoiled.

Can I make avocado popsicles without ice pop molds?

    Ingredients
      

    • 1 Hass avocado (skin and pit removed)
    • 2 cups whole milk
    • ½ cup la lechera (sweetened condensed milk) depending on how sweet you like.

    Instructions
     

    • Blend all ingredients into a blender until smooth. Pour into ice pop molds. Freeze the avocado popsicles overnight or for at least 8 hours.
    • To remove Avocado Popsicles from molds, run them under warm running water until you can gently wiggle them out. Enjoy!

    Storage: Keep the popsicles in their molds or transfer them to a freezer-safe container once completely frozen. Separate unwrapped popsicles with parchment paper to prevent them from sticking together.
    Make Ahead: Prepare and freeze the popsicles at least 8 hours before serving. Making them the night before gives them enough time to become completely firm.
    Freezing: Keep the popsicles continuously frozen until serving. Avoid repeatedly thawing and refreezing them because ice crystals can develop and affect their creamy texture.
