Quick and easy to make, this roasted strawberry compote is delicious, spooned warm or cold over pancakes, waffles, toast, yogurt, cakes, ice cream, brownies, blondies, or even as a filling for pastries.

Beyond desserts, this compote can also add a hint of sweetness to savory dishes like chicken or pork. Thickened only with fresh lemon juice (no cornstarch needed here), it has an intense strawberry flavor.

How to Make Roasted Strawberry Compote

  1. Preheat oven to 400°F (200°C).
  2. Wash, stem, and halve larger strawberries; leave smaller ones whole.
  3. Place strawberries on a non-stick baking sheet, sprinkle with sugar, and drizzle with lemon juice. Mix gently.
  4. Bake for 40 minutes until syrup forms and strawberries are tender.
  5. Transfer to an airtight container and let cool completely before refrigerating.

Camila's Tips

  • Choose fresh, ripe strawberries for the best flavor. Avoid using overripe or underripe strawberries, as they can affect the taste and texture of the compote.
  • Adjust the sweetness to your taste. You can use granulated sugar, honey, or maple syrup. Start with a small amount and add more if needed.
  • Try adding a pinch of freshly ground black pepper for depth and a hint of spice or a dash of cinnamon for a warm, aromatic flavor that complements the strawberries' sweetness. Adjust to taste.

Quick and easy to make, this roasted strawberry compote is delicious, spooned warm or cold over pancakes, waffles, toast, yogurt, cakes, ice cream, brownies, blondies, or even as a filling for pastries.     Ingredients
      

    • 2 lbs. strawberries (about 3 cups)
    • 3 tablespoons granulated sugar , adjust to taste
    • 2 tablespoons freshly squeezed lemon juice or lime juice

    Instructions
     

    • Preheat the oven to 400°F (200°C).
    • Wash the strawberries, remove the stems, and cut the larger ones in half lengthwise. Leave the smaller strawberries whole.
    • Place the strawberries on a large-sized baking sheet, preferably non-stick. Sprinkle with sugar, and drizzle with lemon juice. Gently mix with a spatula.
    • Bake for about 40 minutes, or until a shiny syrup forms and the strawberries are tender. Remove from the oven and transfer the warm strawberries and syrup to an airtight container - if not using a non-stick baking sheet, the syrup may stick to the bottom as it cools. Before refrigerating, let the strawberry compote cool completely.

    How to Store
    Once cool, store in an airtight container. It will keep for up to 7 days.
