How to Make Relajo

- In a small bowl, combine the sesame seeds, pumpkin seeds, peanuts, achiote seeds, oregano, cloves, thyme, allspice, bay leaves, pasilla chiles, and guajillo chiles; mix well.
- Transfer the mixture to a large skillet and toast over medium heat, stirring constantly, until fragrant, about 1 minute. Be careful not to burn the spices.
- Remove from heat and let cool completely. Once cooled, transfer to a blender and blend on high until finely ground, about 1 minute (be careful not to overprocess; you don't want it to turn into a paste).
Hint: For the best flavor, toast the ingredients until fragrant, not burnt. Let them cool completely before blending so the mix stays dry and smooth.
Storage & Make Ahead
Storage: Keep the Relajo mix in an airtight jar at room temperature, away from heat and moisture, to preserve its aroma and flavor.
Make Ahead: You can prepare it ahead of time-it stays fresh for up to 1 month when stored properly. After that, it's still usable, but the aroma and flavor may fade slightly.
