How to Make Pecan Blondies

Preheat the oven to 350 ºF. Line an 8-inch baking pan with parchment paper, leaving a 2-inch overhang on two sides. In a large bowl of an electric mixer, beat the melted butter, brown sugar, granulated sugar, and salt until well combined, about 2 minutes.

Beat in the egg and vanilla until blended. At low speed, add the flour until it is just combined.  Stir in the white chocolate chips and pecans. Transfer the batter to the prepared pan and spread evenly with a rubber spatula.

Bake for 25 to 30 minutes until the top is set and lightly golden. Set the pan on a wire rack to cool. Using the parchment overhang, lift the Blondie from the pan and transfer it to a cutting board.

Cut into 16 squares or the desired quantity. Store the Blondie in an airtight container at room temperature.

    Ingredients
      

    • 113 g (1 stick) unsalted butter , melted
    • ½ cup packed dark brown sugar
    • ⅓ cup granulated sugar
    • 1 large egg , room temperature
    • 1 tablespoon vanilla extract
    • 125 g (1 cup) all-purpose flour , spooned, leveled, and sifted
    • ¼ teaspoon kosher salt
    • 4 oz (⅔ cup) white chocolate chips
    • ½ cup chopped toasted pecans or toasted walnuts optional

    Instructions

    How to Store & Re-Heat
    To store, allow the Pecan Blondies with White Chocolate Chips to cool completely, then transfer them to an airtight container or wrap them tightly in plastic wrap. Store them at room temperature for up to 3-4 days, or refrigerate them for an extended shelf life of up to a week.
    To reheat: When it's time to reheat the Pecan Blondies, you have a couple of options. If you prefer them at room temperature, bring them to room temperature before serving. If you prefer them warm, you can heat individual blondies in the microwave for 10-15 seconds to achieve a slightly gooey texture. Be careful not to overheat them as they can become dry. Another option is to reheat them in a preheated oven at a low temperature (around 250°F or 120°C) for a few minutes until warmed. 
    How to Freeze
    To freeze Pecan Blondies, bake them as per the recipe, cool completely, and cut them into squares. Next, place the individual squares or the entire batch in an airtight container or a freezer-safe bag with parchment paper between the layers to prevent sticking. Make sure to remove as much air as possible to minimize freezer burn. They can be stored in the freezer for up to three months. When ready to enjoy them, simply thaw the Blondies at room temperature or heat them briefly in the microwave or a low-temperature oven. This way, you can have a delightful treat on hand whenever you like.
