How to Make Coleslaw

Add the shredded cabbage and remaining ingredients and toss until well combined.
Serve immediately or cover and refrigerate for an hour before serving and for up to 2 days.

Ingredients
- 1 white or red cabbage (about 1kg / 2lbs before trimming), quartered, cored, and shredded
- 1 cup (200g) mayonnaise
- ¼ cup ( 1 lemon) fresh lemon juice
- 2 teaspoons granulated sugar , adjust to your taste
- 1-½ teaspoons kosher salt , to taste
- ½ teaspoon ground black pepper , to taste
- 2 medium-sized carrots , peeled and grated
- 1 small onion , cut in half and thinly sliced
- 3 tomatoes , cut in half, and sliced, optional
