Easy Coleslaw
Ingredients
- 1 white cabbage (about 1kg / 2lbs before trimming), (about 12 cups), finely shredded
- 1 cup (200g) mayonnaise
- ¼ cup fresh lime or lemon juice
- 2 teaspoons granulated sugar , adjust to your taste
- 1-½ teaspoons kosher salt , to taste
- ½ teaspoon ground black pepper , to taste
- 2 medium-sized carrots , peeled and grated
- 1 small onion , cut in half and thinly sliced
- 3 tomatoes , cut in half, and sliced, optional
