How to Make Cucumber Salad

Whisk the rice wine vinegar, black pepper, and sugar in a small bowl. While whisking, slowly adds the oil and whisk until smooth. Season to taste with kosher salt. Set aside. Soak the red onions in a small bowl of cold water while you prepare the rest of the ingredients, then drain in a fine-mesh strainer.

Blot dry with a paper towel. (This will mellow out and eliminate the sharp, raw onion taste). Add the cucumbers, onions, and cilantro to a medium bowl and toss well. Add the dressing and re-toss. Adjust the seasonings if needed. Serve immediately or refrigerate until ready to use for up to 12 hours.

    Ingredients
      

    • 2 English cucumbers

    Notes

    How to Store
    Cucumber Salad can be stored in the refrigerator in an airtight container for 2-3 days. To prevent the cucumbers from becoming too soggy, it's best to drain off any excess liquid before storing it in the container. Then, when you're ready to serve the salad again, give it a good stir and taste it to see if it needs any additional seasoning. You can also add some fresh herbs or chopped vegetables to provide the salad with a new twist.
    Make-Ahead
    Cucumber Salad is a great make-ahead dish, as it can be prepared several hours or even a day in advance. This makes it perfect for entertaining or those busy weeknights when you want a healthy meal ready. To make the salad ahead of time, follow the recipe instructions, but wait to add the fresh herbs until just before serving.
