How to Make Coconut Pineapple Bars

Preheat the oven to 350°F (180°C). Grease a 9-inch square pan or line it with parchment paper. In a medium bowl, combine the crust ingredients and mix until well combined. Press the mixture into the bottom of the prepared pan to form an even layer. Bake the crust for 12-15 minutes or until it is lightly golden brown. Remove from the oven and let it cool for 10 minutes.

Meanwhile, prepare the filling. In a separate medium bowl, combine the eggs, vanilla extract,  coconut extract, and lemon juice. Whisk until well combined. Add the drained pineapple tidbits and shredded sweetened coconut to the egg mixture. Mix until everything is coated.

In another medium bowl, combine the light brown sugar, all-purpose flour, and kosher salt. Add the dry ingredients to the wet ingredients and mix well. Pour the filling mixture over the crust, spreading it out evenly. Sprinkle the top with the remaining shredded sweetened coconut.

Bake the bars for 25-27 minutes or until the coconut topping turns golden brown. Remove from the oven and let the bars cool completely in the pan. Once cooled, slice the pineapple coconut dessert bars and serve.

    Ingredients
      

    Crust:

    • 125 g (1 cup) all-purpose flour
    • ½ cup Unsalted butter
    • ½ cup light Brown sugar
    • ¼ teaspoon kosher salt
    • 1 teaspoon coconut extract

    Filling:

    • ⅓ cup light brown sugar
    • ¼ cup all-purpose flour
    • ¼ teaspoon kosher salt
    • 2 large eggs
    • 2 teaspoons pure vanilla extract
    • 1 teaspoon coconut extract
    • 1 tablespoon fresh lemon or lime juice
    • 1 cup pineapple tidbits in 100% juice drained
    • 1 cup shredded sweetened coconut

    Topping:

    • 1 cup shredded sweetened coconut

    Instructions

    How to Store & Re-Heat
    Storage:
    Store the cooled bars in an airtight container at room temperature for up to three days or in the refrigerator for up to five days.
    To prevent the bars from sticking together, you can place a layer of parchment paper or wax paper between them.
    If you want to freeze the bars, wrap them tightly in plastic wrap or aluminum foil and store them in an airtight container or freezer bag for up to three months.
    Reheating:
    To reheat the bars, preheat the oven to 350°F (180°C). Place the bars on a baking sheet and bake for 5-10 minutes or until warmed through.
    Alternatively, you can microwave the bars for 10-20 seconds on medium power or until warmed through.
    Keep in mind that reheating the bars may affect their texture, so it's best to only reheat what you plan to eat and not the whole batch.
    Make-Ahead
    Make the bars up to two days ahead of time and store them in an airtight container at room temperature or in the refrigerator.
    If you want to make the bars even further ahead of time, you can freeze them for up to three months. Wrap them tightly in plastic wrap or aluminum foil and store them in an airtight container or freezer bag.
    When you're ready to serve the bars, let them thaw at room temperature for a few hours or overnight in the refrigerator.
    If you want to serve the bars warm, you can reheat them in the oven or microwave, as described in the previous answer.
    To make the bars look fresh and appealing, you can sprinkle some extra shredded sweetened coconut on top before serving.
    Keep in mind that the texture and flavor of the bars may change slightly when you make them ahead of time, especially if you freeze them. However, they should still be delicious and enjoyable.
    How to Freeze
    Once the bars have completely cooled, wrap them tightly in plastic wrap or aluminum foil. Make sure they are fully covered to prevent freezer burn.
    Place the wrapped bars in a freezer-safe container or resealable freezer bag. If using a bag, press out as much air as possible before sealing.
    Label the container or bag with the date and contents.
    Place the container or bag in the freezer and freeze for up to 3 months.
    When you're ready to eat the bars, remove them from the freezer and let them thaw at room temperature for several hours or overnight in the refrigerator.
    If you want to serve the bars warm, reheat them in the oven or microwave as described in a previous answer.
