This easy-to-make dessert bar is perfect for summer picnics, barbecues, and potlucks. Made with a buttery shortbread crust and topped with a sweet and tangy strawberry coconut filling, these bars are a crowd-pleaser that will have your guests asking for seconds.

The crust for these bars is made with a simple mixture of butter, sugar, oats, coconuts, and flour, which is then pressed into the bottom of a baking pan.

The filling is fresh strawberries, sugar, lemon juice, and cornstarch. The mixture is then spread over the crust and baked until golden brown. The result is a sweet, chewy bar that bursts with fruity and coconut flavors.

Serve these bars warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.

How to Make Strawberry Oatmeal Bars

Preheat the oven to 400°F. Line an 8x10 dish with parchment paper. In a large bowl, combine strawberries with ¼ cup light brown sugar, ¼ cup granulated sugar, lemon juice, and cornstarch. Toss until the strawberries are evenly coated, and let sit for a few minutes.

Mix oats, coconut, flour, granulated sugar, light brown sugar, salt, melted butter, and coconut extract in another bowl. Spread half of this oats mixture in the bottom of the lined pan. Pour the berry mixture over the crust and sprinkle the remaining oat mixture.

Bake in the middle oven rack for 30 minutes or until the crust is golden brown and the fruit is bubbly. Allow to cool completely before slicing into bars, or serve warm with a scoop of vanilla ice cream.

    • 2 lbs Fresh Strawberry , stemmed and sliced
    • 2 tablespoons fresh lemon juice or lime
    • 1 teaspoon pure coconut extract
    • ¼ cup light brown sugar
    • ¼ cup granulated sugar
    • ¼ teaspoon kosher salt
    • 2 tablespoons cornstarch
    • 1 cup Unsweetened Shredded Coconut
    • 1-½ cups old-fashioned oats
    • ¾ cup all-purpose flour
    • ⅓ cup light brown sugar
    • ⅓ cup granulated sugar
    • 2 sticks (1 cup) unsalted butter, melted

    Instructions

    How to Store & Reheat
    Strawberry Coconut Oatmeal Bars are best eaten the same day; however, you can store the in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 30-60 seconds or in the oven at 350°F for 5-10 minutes, but note that they won't be as crisp. 
    How to Store & Freeze
    Strawberry oatmeal bars are best enjoyed the same day, it is not advisable to make them ahead of time or freeze them.
