How to Make Chinese Coleslaw

In a small bowl, whisk together all the dressing ingredients. Combine the cabbage, carrot, green onion, peanuts, and cilantro in a separate large bowl. Pour in the dressing and toss with tongs to mix well.

Taste and adjust seasoning if necessary. Cover and refrigerate the Chinese Coleslaw for at least ten minutes so the vegetables can soak up the dressing. Enjoy!

    Ingredients
      

    • 4 cups sliced purple cabbage , finely shredded (or 4 cups coleslaw mix)
    • 1 carrot , julienned
    • 1 green onion , finely sliced
    • ⅓ cup toasted peanuts , coarsely chopped
    • ½ bunch cilantro , minced (steam removed)

    For the Dressing:

    • 1 tablespoon peanut oil or canola oil
    • 2 tablespoons Chinkiang vinegar
    • 1 tablespoon low sodium soy sauce
    • 1 tablespoon honey
    • 2 teaspoons sesame oil
    • 2 cloves garlic , minced
    • ¼ teaspoon kosher salt , to taste

    Instructions
     

    • In a small bowl, whisk together all the dressing ingredients. In a separate large bowl, combine the cabbage, carrot, green onion, peanuts, and cilantro.
    • Pour in the dressing and toss with a pair of tongs to mix well. Taste and adjust seasoning if necessary.
    • Cover and refrigerate the Chinese Coleslaw for at least ten minutes, so the vegetables have a chance to soak up the dressing. Enjoy!

    Notes

    How to Store
    The Easy Chinese Coleslaw can be stored in an airtight container in the refrigerator for up to 3 days. If you're planning to hold it for a longer time, it's best to keep the dressing and the coleslaw separate and mix them right before serving for the best flavor. 
    Remember that the vegetables may become slightly softer if not kept refrigerated. If the coleslaw seems dry or limp after being stored in the refrigerator, refresh it by adding some extra dressing or a squeeze of fresh lime juice. 
    Make-Ahead
