How to Make Roasted Cherry Tomatoes

Preheat the oven to 400 degrees F. In a large bowl, add all ingredients and mix well. Toss the tomato mixture on a sheet pan. Spread them out into one layer and roast for 30 to 40 minutes, until tomatoes are blistered and beginning to burst.

Transfer the tomatoes to a serving platter. Serve hot or at room temperature.

    Ingredients
      

    • 1 Quart cherry tomatoes
    • ¼ cup extra virgin olive oil
    • 1 teaspoon balsamic
    • ½ teaspoon Herbs de Provence or a combination of ¼ teaspoon dried oregano and ½ teaspoon dried dill
    • 3 cloves garlic , minced
    • ¼ teaspoon kosher salt
    • ¼ teaspoon ground black pepper

    Instructions
     

    • Preheat the oven to 400 degrees F. In a large bowl, add all ingredients, and mix well. Toss the tomato mixture on a sheet pan. Spread them out into one layer and roast for 30 to 40 minutes, until tomatoes are blistered and beginning to burst. Transfer the tomatoes to a serving platter. Serve hot or at room temperature.

    Notes

    How to Store & Re-Heat
    To store: roasted cherry tomatoes, let them cool to room temperature, then transfer them to an airtight container and refrigerate for up to 3 days. You can also freeze roasted cherry tomatoes for up to 2 months by transferring them to a freezer-safe container or resealable bag. When you're ready to reheat, let the roasted cherry tomatoes thaw in the refrigerator overnight if frozen. Then, you can heat them in the microwave or the oven.
    To reheat: roasted cherry tomatoes in the microwave, transfer them to a microwave-safe dish, and heat on high for 30-second intervals, stirring between intervals until the tomatoes are heated through. To reheat in the oven, preheat the oven to 350°F, transfer the tomatoes to an oven-safe dish, and bake for 10-15 minutes, until heated through. You can toss the roasted cherry tomatoes with olive oil and heat them on the stovetop in a skillet over medium heat until heated.
    Whatever method you choose, stir the tomatoes occasionally to ensure even heating.
    Make-Ahead
    You can make the roasted cherry tomatoes up to 1 day ahead. Let them cool to room temperature, then transfer them to an airtight container and store them in the refrigerator. To serve, you can reheat the tomatoes in the oven or microwave or bring them to room temperature before serving. You can also prepare the tomatoes and roast them just before serving. To do this, prepare the tomatoes as instructed in the recipe, then store them in an airtight container in the refrigerator until ready to roast.
    How to Freeze
    To freeze roasted cherry tomatoes, let them cool to room temperature, then transfer them to a freezer-safe container or resealable bag. Be sure to label the container with the date and contents. Roasted cherry tomatoes can be frozen for up to 2 months. When ready to use them, let the frozen tomatoes thaw in the refrigerator overnight.
    You can then use them in your favorite dishes or reheat them using the methods described in the previous answer. Keep in mind that the texture of the tomatoes may change slightly after freezing, becoming slightly softer or mushier, but they will still be flavorful and delicious.
