It's smooth, creamy, and perfect for dipping or drizzling over nachos, fries, and veggies.

For this Salsa de Queso recipe, I use American cheese for its smooth melt, whole milk to thin out the sauce, and a touch of chipotle for a smoky kick.

It's the kind of cheese sauce you can whip up in minutes, yet it tastes like you spent much longer on it. Best of all, it's easy to customize based on your spice level or whatever you have on hand.

Ingredients You'll Need

  • American cheese: Melts easily for a smooth, creamy sauce.Can be substituted with Velveeta.
  • Whole milk: Thins the cheese to the right dipping consistency.
  • Canned Chipotle in adobo: Adds smoky heat and bold flavor.

How to Make Salsa de Queso

1. Combine American cheese, milk, and chipotle in a large microwave-safe bowl.

2. Microwave on high for about 3 minutes, stirring every 30-45 seconds, until smooth and fully melted.

Hint: As the cheese sauce cools, it may thicken. To loosen it, stir in a splash of milk and microwave it for 15-30 seconds, then mix until smooth and creamy again.

Storage, Make Ahead, & Freezing

  • Storage: Let the sauce cool completely, then transfer it to an airtight container. Store in the fridge for up to 2 days.
  • Reheating: Microwave in short intervals (15-30 seconds), stirring in a splash of milk as needed to restore smooth texture.
  • Make Ahead: You can prepare the sauce 1-2 days in advance. Reheat just before serving.
  • Freezing: Not recommended.

Camila's Tips & Variations

  • Adjust the heat: For a spicier sauce, add more chipotle or a splash of adobo sauce. For a milder version, reduce the amount or omit it entirely.

Can I use a different type of cheese?

Yes! Velveeta, or any processed cheese that melts smoothly, will work well.

Can I make this without a microwave?

Absolutely. Just heat everything in a saucepan over low heat, stirring constantly until melted and smooth.

How do I keep the sauce from clumping?

Stir frequently while microwaving, and add a splash of milk when reheating to keep it smooth.
