How to Make Keto Chocolate Bar

Line 9 x 4 loaf pan with parchment paper or foil; set aside. Whisk the cocoa powder, salt, allulose, vanilla, and melted coconut oil in a medium bowl until well combined. Stir in the shredded coconut, pour the chocolate mixture onto the prepared pan, and smooth it out evenly using an offset spatula.

Sprinkle the chopped almonds evenly over the chocolate mixture. Place the pan into the freezer to set it for about 30 minutes. Use a Chef's Knife, cut the keto chocolate bar into desired pieces, and store it in an airtight container in the fridge to keep it fresh and prevent it from melting.

    Equipment

    • Medium Mixing bowl

    Ingredients
      

    • ½ cup cacao or cocoa powder
    • ½ cup coconut oil , melted, preferably organic
    • ¼ cup Allulose
    • ⅛ teaspoon sea salt or kosher
    • ½ teaspoon pure vanilla extract
    • ¼ cup unsweetened shredded coconut
    • ¼ cup whole almonds , roughly chopped

    Instructions

    How to Store & Re-Heat
    To store: Store the chocolate bars in an airtight container in the fridge for up to a month or in the freezer for up to three months. It's best to separate each layer of chocolate with parchment paper to prevent them from sticking together.
    To reheat: If you prefer to eat the chocolate bars warm, you can reheat them gently in the microwave or on the stove. To microwave, place the chocolate bar in a microwave-safe dish and heat on low for 10-15 seconds or until just warmed through. 
    Make-Ahead
    You can make them ahead of time and store them in the fridge or freezer until ready to serve. Simply follow the recipe instructions, pour the chocolate mixture into a lined pan, and set it in the freezer for about 30 minutes. Once the bars are set, cut them into pieces and store them in an airtight container in the fridge or freezer. When you're ready to serve, take the bars out of the fridge or freezer, enjoy them cold, or reheat them gently in the microwave or stove. 
    How to Freeze
    Freezing the keto chocolate bars is a great way to extend their shelf life and have them on hand for longer. To freeze the bars, follow the recipe instructions and pour the chocolate mixture into a lined pan. Once the bars are set, cut them into pieces and place them in a single layer on a parchment-lined baking sheet. Put the baking sheet in the freezer and let the chocolate bars freeze for a few hours or until solid. Once frozen, transfer the bars to an airtight container or freezer bag and store them in the freezer for up to three months.
