How to Make Chocolate Ganache

Place the chocolate in a stainless steel bowl. Bring the cream to a simmer. Pour the hot cream over the chocolate.
Allow to stand for 1 minute, then gently stir to blend—strain and cool. Cover and refrigerate overnight before using.

- 910 ml (2 lb) heavy cream , you may use more or less depending on how you plan to use the ganache.
