Baked Garlic Potato Wedges

Baked garlic potato wedges are a tasty and easy dish that everyone can enjoy. These wedges are made by cutting potatoes into thick pieces, seasoning them with garlic and herbs, and then baking them in the oven.

This method makes them healthier than fried potatoes, as they're cooked with less oil. The outside of the wedges gets nice and crispy, while the inside stays soft and fluffy.

How to Make Garlic Potato Wedges

Preheat the oven to 400 F. Pile the minced garlic on one side of the board and sprinkle with kosher salt. Tilt the knife at a 30-degree angle to the board and drag it over the garlic, scraping it across the surface until it is a smooth paste; set aside.

Scrub the potatoes, cut them half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. Put the potato wedges into a large bowl.

In a small bowl, whisk the herbs, garlic paste, garlic, paprika, ground black pepper, and oil until blended.

Pour the seasoning mixture over the potatoes. Sprinkle the flour over the potatoes and toss until the potatoes are thoroughly coated. Spread the potatoes out on the prepared baking sheet, being sure to leave space in between the wedges.

    • ¼ cup peanut oil or Olive Oil
    • 1-½ teaspoons kosher salt , to taste
    • ¾ teaspoon ground black pepper

    • 1 teaspoon Herbs de Provence
    • 1 teaspoon sweet paprika
    • 2 tablespoons flour
