How to Make Papas al Horno

Preheat the oven to 400°F and line a 13'' x 18'' x 1'' baking sheet with parchment paper (or use a nonstick baking sheet).
Scrub the potatoes, then cut them in half lengthwise. Next, cut each half into thirds lengthwise.
You'll have 6 long wedges from each potato. Put the potato wedges into a large bowl.
In a small bowl, whisk together the cajun, garlic, red pepper flakes, oregano, salt, and oil until blended, then pour over the potatoes.
Sprinkle the flour over the potatoes and toss until thoroughly coated.
Spread the potato wedges out on the prepared baking sheet, being sure to leave space between the wedges.
Bake the potato wedges for 30-35 minutes, turning them to the other cut side after 20 minutes, until they are lightly browned, crisp on the outside, and tender on the inside.

Storage, Make Ahead, & Freezing
Storage: Store leftover potatoes in an airtight container in the refrigerator for 3-4 days. Reheat in a 350°F (180°C) oven until warmed and crisp, or microwave in short intervals.
Make Ahead: Cut the potatoes and keep them in cold water for up to 24 hours. The seasoning blend can also be mixed in advance and stored in an airtight container until ready to use.
Freezing: You can freeze the potato wedges, though they may lose crispiness. Freeze fully cooled wedges in a single layer until solid, then transfer to a freezer-safe bag. Freeze for 2-3 months. Thaw in the refrigerator, then reheat in a 350°F (180°C) oven until hot.
