Delicious and Irresistible Dulce de Mamón (Paraguayan Papaya dessert). Today, we're sharing one of our favorite recipes, a traditional Paraguayan dessert made with just a few simple ingredients: papaya, sugar, and water.

We have also added clove and vanilla to enhance the flavor. The combination is simmered until the fruit develops a soft texture inside but is chewy on the outside. Serve on its own or over milk for a delicious treat after any meal!😋
How to Make Dulce de Mamón

Peel and cut the fruit in half, remove the seeds, and slice them into thick wedges. Rinse thoroughly with cold water. Bring a pot full of water to a boil.
After the water boils, add the fruit pieces to the pot (make sure the water covers all the fruit pieces) and bring to a boil; cook for 5 minutes.



Drain the fruit and rinse it several times with cold water. Add enough water to cover all the fruit pieces in a pot, stir in the baking soda, add the fruit, and let it rest for 1 hour.
Carefully drain the fruit and rinse it with cold water to remove the baking soda. In a deep pot, add sugar and let it caramelize. Then, carefully place the fruit and pour in enough hot water to cover all the fruit pieces. Add the whole cloves.
Bring the fruit mixture to a simmer. Simmer until the fruit reaches a glossy, transparent amber color and the liquid has been reduced by half, turning into a golden syrup, for about 1.5 to 2 hours. Remove from heat and let cool completely.

Remove the cloves and transfer them to a sealed container. Store in the refrigerator. Scoop some Dulce de Mamon into a bowl and serve as it or with cold milk. So good!!!😋

Easy Dulce de Mamón

- 1 kg Green Papaya Peel and scoop out the seeds from the center using a spoon, then cut the fruit into wedges or chunks.
- 500 g granulated sugar add more, up to 1 kg, if you like it sweeter
- 1 Tablespoon baking soda
- 2 to 3 Liters water or enough to cover the fruit
- 1 teaspoon pure vanilla extract
- 3 whole cloves or the zest of 1 lime, lemon, or orange (optional)
