Delicious and Irresistible Dulce de Mamón "Paraguayan Papaya dessert ". Today, we share one of our sweet recipes, a traditional Paraguayan dessert that uses just a few basic ingredients: papaya, sugar, and water. We have also added clove and vanilla to enhance the flavor. The combination is simmered for at least two to three hours on low heat until the fruit develops a soft texture inside but is chewy on the outside. Ingredients

  • 1 kg of Mamon Verde (Green Papaya or semi-ripe papaya)
  • 500 g granulated sugar , to taste
  • 1 Tablespoon baking soda
  • 2 L to 3 L Water , or as needed
  • 1 teaspoon pure vanilla extract
  • 1 whole clove or zest from 1 lime , lemon, or orange, optional

Instructions

  • Peel and cut the fruit in half, remove the seeds, and slice them into thick wedges. Rinse thoroughly with cold water.
  • Bring a pot full of water to boil. After the water boils, add the fruit pieces into the pot (make sure the water covers all the fruit pieces) and bring to a boil; cook for 5 minutes.
  • Drain the fruit and rinse it several times with cold water. In a pot, add enough water to cover all the fruit pieces and stir in the baking soda; add the fruit and let it rest for 1 hour. Carefully drain the fruit and rinse it several times with cold water to get rid of the baking soda.
  • In a deep pot, add sugar and let it caramelize. Then carefully place the fruit and pour in enough hot water to cover all the fruit pieces. Add the whole cloves.
  • Bring the fruit mixture to a simmer. Simmer until the fruit reaches a glossy, transparent `amber color, and the
  • liquid has reduced by half and turned into a golden syrup, about 2 to 3 hours.
  • Remove from heat and let cool completely. Remove the cloves and transfer them to a sealed container. Store in the refrigerator. To serve, scoop some Dulce de Mamon into a bowl and serve as it or with cold milk over. So good!!!😋

How to Store & Re-Heat
To store: Properly storing and reheating Dulce de Mamón is essential to maintain its quality and freshness. To store Dulce de Mamón, place it in a container and store it in the refrigerator for up to 5 days. If the syrup thickens as it cools, it will liquefy again when reheated.
To reheat:  When reheating on the stove, place the Dulce de Mamón in a saucepan over low heat and occasionally stir until heated. If the syrup is too thick, add a little water to thin it out.
Alternatively, you can reheat it in the microwave by transferring it to a microwave-safe bowl, covering it with a lid or plastic wrap, and microwaving it on high for 30-second intervals, stirring until heated. When serving chilled Dulce de Mamón, let it sit at room temperature for a few minutes to remove the chill. Use a clean utensil when serving or storing Dulce de Mamón to prevent contamination. By following these tips, you can ensure that your Dulce de Mamón stays fresh and delicious even after it has been made.
Make-Ahead
Making Dulce de Mamón ahead of time is a great way to save time and prepare for a special occasion or event. Follow the recipe, boiling the green papaya in the syrup until it becomes translucent and thickens. Once cooked, remove the pot from the heat and let it cool to room temperature. Once cooled, transfer the Dulce de Mamón to an airtight container and store it in the refrigerator for up to 5 days.
When ready to serve, reheat the Dulce de Mamón on the stove or microwave, following the instructions before. This can be a convenient way to ensure that your dessert is ready when you are.
Notes:
Don't worry if all the water evaporates; add more hot water.
