How to Make Italian Sausage

Grind the meat with a ⅜” (10 mm) plate. Mix meat with all ingredients, including water. *(Pinch off a small piece of the sausage and cook it in a frying pan; let it cool and taste to see if the seasoning is to your taste)
Stuff into 32 - 36 mm hog casings and tie into 5” (12 cm) links. Alternately, shape into patties. Cook sausage in the usual manner, making sure the internal temperature of the sausage links reaches at least 150 degrees F. It is recommended for frying or grilling.

Easy Italian Sausage
Ingredients
For the Meat:
- 2.20 lbs (1000 g) Pork shoulder *(no more than 35% fat)
Condiments:
- 1 teaspoon (2.33 g)black pepper, coarse
- 3 teaspoon (18 g) Kosher salt
- ½ teaspoon (2 g) Sugar
- 2 teaspoon (3 g) fennel seed, cracked
- ½ teaspoon (1 g) coriander
- 1 tablespoon (6.9g) paprika
- 1 Fresh garlic clove , peeled and mashed into a paste or ½ teaspoon (1.4 g ) garlic powder
- ½ teaspoon (1g) caraway
- ½ cup (100 ml) cold water
Instructions
