How to Make Mozzarella Cheese Sticks

Combine both bread crumbs in a shallow dish to blend, and set aside. In a shallow dish, combine the flour, paprika, salt, cayenne pepper, and black pepper, and set aside. Whisk the egg and garlic powder in another shallow dish and set aside.
Working with 1 piece of mozzarella at a time, dredge in the flour mix, dip in egg mixture, allowing the excess egg to drip back into the bowl, and coat in breadcrumbs mix.
Repeat this process one more time by dipping the egg mixture again and then the bread crumbs again. (Use one hand with the dry mixture and the other with the wet mixture.) Place the cheese sticks on a baking sheet.
Repeat dipping the cheese sticks in the egg and breadcrumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours, or overnight. Preheat the oven to 450 degrees F. Place the mozzarella sticks on a baking sheet lined with parchment paper.
Arrange the breaded Mozzarella sticks in a single layer and thoroughly coat them with olive oil cooking spray. Place them on the middle rack of the oven and bake until golden, about 9 to 11 minutes.
