For this Brigadeiro de Morango recipe, you can use Nesquik strawberry flavor, ground freeze-dried strawberries, or even gelatin.

How to Make Brigadeiro de Morango

  1. Combine condensed milk, cream, and butter in a saucepan over low heat until butter melts.
  2. Stir in Nesquick or ground freeze-dried strawberries and cook until thickened (about 20 mins).
  3. Transfer mixture to a plate and let cool.
  4. Prepare candy cups and grated coconut.
  5. Shape the cooled mixture into balls and roll in sugar or sprinkles.
  6. Place each ball in a candy cup and insert a clove.
  7. Repeat until all the mixture is used.

  • For this Brigadeiro recipe, you can simply switch out the strawberry gelatin for your favorite flavor.
  • Stir continuously while heating to prevent the mixture from sticking to the pan.
  • The mixture will take some time to thicken, so be patient and continue stirring until it reaches consistency.
  • Let the mixture cool to room temperature before shaping it into balls to avoid burning your hands and to allow for easier handling.
  • Lightly grease your hands with butter before shaping the mixture into balls to prevent sticking.

Storage, Make Ahead, & Freezing

Storage: Store Brigadeiro de Morango in an airtight container in the refrigerator for up to 5 days.

Keep them in a single layer or separate layers with parchment paper to prevent sticking.

Make Ahead: You can prepare the brigadeiro mixture 2-3 days ahead. Once cooled, cover tightly and refrigerate. Shape the balls just before serving for the best texture.

Freezing: Freeze shaped brigadeiros (without rolling in sugar) on a parchment-lined tray until firm. Transfer to a freezer-safe container and freeze for up to 2 months.

Thaw in the refrigerator overnight, then coat in sugar or sprinkles before serving.

    Ingredients
      

    • 1 tablespoon unsalted butter
    • 397 g (14 ounces) sweetened condensed milk
    • 4 tablespoons Nesquick strawberry or ground freeze-dried strawberries You can also use strawberry gelatin. You'll need 1 box (3 oz/85g)
    • Sprinkles or granulated sugar to coat

    Instructions
     

    • Combine the condensed milk, cream, and butter in a small saucepan and place it over low heat. Stir with a silicone spatula until the butter is completely melted.
    • Add the Nesquick strawberry or ground freeze-dried strawberries and continue to stir for about 20 minutes or until the mixture thickens to the point where it can be shaped into balls.
    • Make sure to frequently scrape the sides and bottom of the pan with the spatula to prevent the mixture from burning.
    • Pay attention to the consistency: slightly tilt the pan to check, the beijinho mixture should pull away from the bottom of the pan when ready.
    • Once ready, transfer the brigadeiro de morango mixture to a deep plate or dish and allow it to cool to room temperature before shaping it.
    • Prepare 23 candy cups (size #5). Pour the remaining grated coconut onto a deep plate. 
    • To form the brigadeiro, lightly grease your hands with some butter and take a small amount of the mixture, rolling it into a ball.
    • Roll the ball in the granulated sugar, sprinkles, or ground freeze-dried strawberries until it's fully coated. Place each coated ball into a candy cup and insert a clove at the top. Repeat with the remaining mixture.
