This brigadeiro de colher recipe cooks the mixture slowly, allowing it to thicken without sticking or burning. The method creates a smooth, spoonable texture that holds shape but stays soft.

Ingredients You'll Need

Note: Full ingredients and amounts are listed in the recipe card below.

  • Sweetened condensed milk: Provides sweetness and structure, helping the dessert thicken evenly.
  • Milk: Loosens the mixture, keeping it spoonable.
  • Unsweetened Cocoa powder: Adds chocolate flavor without making the dessert heavy.
  • Butter: Adds richness and prevents sticking.

How to Make Brigadeiro de Colher

Note: Full instructions are provided in the recipe card below.

  1. Combine the milk and cocoa powder in a saucepan.
  2. Heat over medium, stirring until fully dissolved.
  3. Remove from the heat and add the condensed milk and butter.
  4. Return to medium heat and stir constantly.
  5. Cook until the mixture thickens and pulls away from the pan.
  6. Transfer to a dish and let cool slightly.
  7. Serve warm or at room temperature.

Hint: The brigadeiro is ready when it pulls away from the pan and leaves a clean line at the bottom.

Storage, Make Ahead, & Freezing

Storage: Store brigadeiro de colher in an airtight container in the refrigerator for up to 4 days.
Make Ahead: Prepare up to 1 day in advance and refrigerate until serving. Reheat in 10-15 second intervals, stirring between each, and add a splash of milk if needed to loosen.
Freezing: Not recommended.

Camila's Tips & Variations

  • Too thick: Add a splash of warm milk and stir until smooth.
  • Too thin: Cook 1-2 minutes longer, stirring constantly.
  • Burning bottom: Lower the heat and keep stirring.
  • Stronger chocolate flavor: Add 1 extra tablespoon of cocoa powder.
