  • 106 g to 165 g (½ to ¾ cup) light brown sugar (adjust based on desired sweetness)
  • 120 g (1 cup) chopped pecans, divided (can substitute with walnuts or almonds)
  • 85 g (½ cup) raisins
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon freshly grated nutmeg , optional
  • ½ teaspoon kosher salt
  • 2 large eggs
  • 480 g (2 cups) milk (preferably whole, but any milk percentage or non-dairy alternative can be used)
  • 1 tablespoon vanilla extract
  • 55 g (4 tablespoons) unsalted butter, melted, plus extra for greasing the dish
  • 2 tart-sweet baking apples (like Honeycrisp or Gala), peeled and cut into ½-inch chunks

Instructions

  • Preheat the oven to 350°F. Grease a 9-inch baking dish with butter and set an oven rack in the middle position.
  • In a medium bowl, combine the oats, light brown sugar, raisins, baking powder, cinnamon, and nutmeg.
  • In another bowl, whisk the eggs to break them up, then add the milk, vanilla, and salt, whisking until everything is well combined.
  • Pour the milk mixture into the oat mixture, add the melted butter, and stir until well combined. Gently fold in the apples and ½ cup of the nuts.
  • Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ½ cup of nuts on top.
