  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease a 9-inch square baking dish with unsalted butter. In a medium bowl, stir together the oats, brown sugar, baking powder, cinnamon, nutmeg, kosher salt, and ½ cup of the chopped pecans.
  • In another bowl, break up the eggs with a whisk, then mix in the milk and vanilla until well combined. Finally, add the milk mixture to the oat mixture and the melted butter. Scatter 2 cups of the blueberries evenly over the bottom of the prepared baking dish.
  • Pour the oatmeal mixture over the top and spread it evenly. Sprinkle the remaining ½ cup nuts and ½ cup blueberries on top. Bake for 45 to 55 minutes until golden at the edges and set at the center. Let cool for at least 5 minutes, then serve warm or at room temperature.

To store: Blueberry Baked Oatmeal can be kept covered with plastic wrap in the refrigerator for up to 4 days.
To reheat: Covered with foil, in a 350° F preheated oven for about 20 minutes or microwave individual portions on high for 1 minute or until hot.

How to Freeze
Blueberry Baked Oatmeal can be frozen after baking and tightly covered for up to 3 months. When ready to serve, let it defrost in the refrigerator for 24 hours, then reheat it, covered with foil, in a 325° F oven until hot.
