How to Make Skillet Lasagna

Heat the oil in a 14-inch skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon until browned, about 10 minutes. Add the onions, bell pepper, garlic, and fresh tomatoes and season with 1-½ teaspoons kosher salt, ½ teaspoon red pepper flakes, and ½ teaspoon ground black pepper and stir to combine.
Cook for 7 to 10 minutes, stirring until the vegetables become very soft and aromatic. Add ¾ cup wine, stirring to deglaze the bottom of the skillet for about 3 minutes. Scatter pasta over meat, but do not stir.
Pour Crushed tomatoes and 2 cups of water over the pasta cover and bring it to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until pasta is tender, about 20 minutes. Off heat, stir in ½ cup freshly grated grana Padano cheese or parmesan cheese.
Taste and adjust seasoning with kosher salt and pepper if needed. Dollop heaping tablespoons of ricotta cheese over the top, cover, and let it sit for 5 minutes to soften. Sprinkle fresh basil and reaming 2 tablespoons of Grana Padano cheese. Serve.

- 1 tablespoon extra virgin olive oil
- 1 medium onion , finely diced
- 1 red bell pepper or poblano pepper , finely chopped
- 8 cloves garlic , minced
- ½ teaspoon red pepper flakes (optional)
- ½ teaspoon ground black pepper
- 1-¼ teaspoons Kosher salt , adjust to taste
- ½ cup torn basil
- ¾ cup red wine such as Malbec or water
- 2 cups water , as needed
- 2 teaspoons sugar
- 1 pound Italian sausage , casing removed or meatloaf mix
- 10 curly-edged lasagna broken into 2-inch lengths
- ½ cup plus 2 tablespoons freshly grated Grana Padano or Parmesan cheese
- 8 ounces (1 cup) whole milk or part-skim ricotta
