How to Make Funnel Cake

Heat oil to 350° F in a medium saucepan or cast-iron skillet. In a large bowl, combine all ingredients until no lumps remain. The batter should be smooth.
Pour batter into a funnel with a ½'' diameter hole, making sure to plug the hole with your finger and hold the funnel about 1 '' above the oil. Quickly swirl and zigzag the batter around the oil. Each funnel cake should use about ½ cup if using an 8" pan.
Fry until golden brown on the first side ( about 2 minutes); carefully turn and continue frying until golden brown on the other side. Transfer to a plate with a paper towel and dust with powdered sugar or any topping you choose.
