Preheat the oven to 350°F. Grease a 9-inch baking dish with butter and set an oven rack in the middle position.
In a medium bowl, combine the oats, light brown sugar, raisins, baking powder, cinnamon, and nutmeg.
In another bowl, whisk the eggs to break them up, then add the milk, vanilla, and salt, whisking until everything is well combined.
Pour the milk mixture into the oat mixture, add the melted butter, and stir until well combined. Gently fold in the apples and ½ cup of the nuts.
Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ½ cup of nuts on top.
Bake for 40-45 minutes, until the top is golden and the oats are set.
Serve warm or at room temperature.

Storage: Keep leftovers covered in the refrigerator for up to 5 days. Reheat in the oven at 165°C (325°F) or microwave until warm.
Make Ahead: You can assemble it the night before, cover it, and refrigerate it. In the morning, bake as directed.
Freezing: Freeze after baking by wrapping tightly and storing for up to 3 months.
