Cranberry Brownies

These tantalizing Cranberry Brownies make a delicious treat for the holidays! If you love fudgy brownies and the tart flavor of cranberries, you'll love this unique and decadent Cranberry Brownies recipe.

Made with a combination of semisweet chocolate and light brown sugar to balance the tartness of the fresh cranberries that will soften and burst as the brownies bake. The perfect finishing touch for any holiday meal!😉

How to Make Cranberry Brownies

 Grease a 9-inch-by-9-inch square pan with cooking spray. Line the pan with parchment paper, leaving some overhang; set aside. Position racks in the upper and lower thirds of the oven and preheat to 325 degrees F.

Spread the pecans on a rimmed baking sheet and bake until slightly darkened, about 10 minutes; let cool completely. Once cooled, roughly chop the pecans; set aside.

In a medium bowl, sift together flour and cocoa; toss in the pecans if using, and set aside. In a medium sauce pot over medium-low heat, melt the chocolate and butter, stirring until melted.

Remove the pot from the heat and whisk in the sugar right into the pot. Whisk in the eggs one at a time, then whisk in the salt and vanilla. Stir in the flour and cocoa powder mixture until evenly combined. Fold in the cranberries.

Spread the Cranberry Brownies into the prepared pan and bake them for 28-30 minutes until a toothpick inserted in the center of the brownies comes out with moist crumbs. Enjoy!😋

    Notes

    How to Store 
    To store brownies, allow them to cool completely before storing them. Once cooled, store the brownies in an airtight container at room temperature for up to 3 days. If you want to keep them fresh for a longer time, you can store them in the fridge for up to a week. To prevent the brownies from sticking together or getting mushy, place a sheet of parchment or wax paper between the layers of brownies.
    You can also wrap each brownie individually in plastic or aluminum foil to make it easier to grab and go. For longer storage, you can freeze the brownies. Wrap each brownie in plastic wrap or aluminum foil, then place them in a freezer-safe container or freezer bag. They will keep for up to three months in the freezer. When ready to eat, thaw the brownies at room temperature for a few hours or overnight in the fridge.
    Make Ahead
    You can make Cranberry Brownies a day ahead of time and store them at room temperature for up to 3 days in an airtight container with a sheet of parchment or wax paper between the layers. This can save you time on the day you plan to serve them, as all you'll need to do is take them out of the container and arrange them on a platter.
    If you're making the brownies further in advance, you can freeze them for up to three months. Follow the instructions for freezing the brownies mentioned earlier. When ready to serve, thaw the brownies overnight on the countertop or in the fridge. The thawed brownies can be served as is or warmed in the oven or microwave before serving.
    How to Freeze
    To freeze brownies, allow them to cool completely first. Then, wrap each brownie tightly in plastic or aluminum foil, or place them in a single layer in a freezer-safe container. If you are stacking the brownies, place a sheet of parchment paper or wax paper between the layers to prevent them from sticking together. Make sure the container is airtight to prevent freezer burn. Label the container with the date and contents, and place it in the freezer.
    To thaw the brownies, remove them from the freezer and let them sit at room temperature for a few hours or overnight in the fridge. Alternatively, you can microwave the frozen brownies for a few seconds to thaw them out quickly. Once thawed, reheat the brownies in the oven or microwave for a few seconds before serving.
