How to Make Agua de Tamarindo

Note: The full instructions are provided in the recipe card below.

Peel the tamarind pods. Remove as much of the hard shell and strings as possible.

Use a scissor to make it easier to cut the tamarinds and remove the seeds before placing them in the water. (This way, you avoid having to look for the seeds in the water)

Don't worry if you can't get all of the shells of the tamarind; the remaining bits will come off when you boil them. Add the peeled tamarind and 4 cups of water to a large pot. Boil for 15 - 20 minutes or until very soft and begin to release the pulp.

Turn off the heat and let it cool. Once cooled, use clean hands to squeeze the mushy pods to separate the flesh and any remaining seeds, or use a Stainless Steel Potato Masher.

Place the liquid and remaining pulp in a blender and process until the pulp is fully blended into the water. Run the liquid through a strainer or leave it pulpy.

Pour your Agua de Tamarindo into a pitcher, add the remaining water, and add sugar to taste. Refrigerate until cold. Store in the refrigerator for up to 2 days. Serves cold over ice! Enjoy!

Storage, Make Ahead

Store: To store the Agua de Tamarindo, store it in an airtight container in the refrigerator for up to 2 days. Before serving, stir well to mix any settled solids. Agua de tamarindo should not be reheated as it is best served cold.

Make-Ahead: You can make the Water up to 2 days in advance and store it in the refrigerator until ready to serve. To save time on the day of serving, you can peel the tamarind pods and remove the seeds in advance.

Camila's Tips & Variations

  • Make it spiced: Add a cinnamon stick or a few cloves while boiling the tamarind pods for a warm, aromatic flavor.
  • Add citrus: A splash of fresh lime or orange juice brightens the flavor and balances the sweetness.
  • Serve it sparkling: For a fun twist, mix chilled Agua de Tamarindo with sparkling water before serving.
  • Turn it into popsicles: Pour the drink into molds and freeze for a tangy, icy treat-great for kids and hot summer days.
  • Pair it well: This agua fresca tastes amazing with savory Mexican dishes like tacos, tamales, or enchiladas.

Frequently Asked Questions

Is Agua de Tamarindo healthy?

Yes, when made with moderate sugar, Agua de Tamarindo can be a healthy refreshment. Tamarind is naturally rich in antioxidants, vitamins, and minerals that support digestion, heart health, and hydration.

Can I make Agua de Tamarindo without sugar?

Absolutely. You can skip the sugar or use alternatives like honey, agave syrup, or a zero-calorie sweetener. If your tamarind is very ripe, you may find it sweet enough on its own.

Fresh Agua de Tamarindo should be stored in an airtight container in the refrigerator and consumed within 2-3 days for the best taste and freshness. Stir before serving, as the pulp may settle at the bottom.
