Jugo de Perejil (Parsley juice) is a popular natural drink in Paraguay, known for its refreshing taste and health benefits.

Ingredients
  

  • 1 bunch fresh Italian or curly parsley , washed and roughly chopped.
  • 1-½ liters filtered water , adjusting based on how strong or light you prefer the flavor.
  • Juice of 1 lemon or lime
  • 50 ml unsulphured molasses or 50g sugar (to taste)

Instructions
 

  • Wash the fresh parsley thoroughly and roughly chop it. Add it to a blender with water and blend until smooth.
  • Strain the mixture through a fine mesh strainer or cheesecloth into a pitcher, pressing to extract as much liquid as possible.
  • Stir in the juice of one lemon and add unsulphured molasses or sugar to taste, mixing until fully dissolved. Refrigerate until well chilled, and serve cold over ice if desired.

Notes

Storage: This drink is best enjoyed fresh, right after preparing. However, if needed, you can store it in a sealed jar or pitcher in the fridge for up to 24 hours. Shake or stir before serving, as it may naturally settle.
