Ingredients
  

  • 12 large eggs
  • ½ cup heavy cream
  • 1 teaspoon ground black pepper
  • ½ teaspoon kosher salt
  • 1 cup Bacon Bits or fresh cooked bacon crumbled or chopped
  • 2 cups shredded Mexican cheese blend divided
  • 8 ounces cream cheese cut into ½-inch chunks ,divided

Instructions
 

  • Preheat your oven to 350°F. Grease a 9x13-inch baking dish with butter or cooking spray. In a blender, combine the 4 oz cream cheese, eggs, salt, and half of the 1-½ cups shredded cheese.
  • Blend until well combined and smooth, about 30 seconds. Pour the egg mixture from the blender into the greased baking dish. Sprinkle the bacon bits over the egg mixture. Sprinkle the remaining shredded cheese over the bacon.
  • Dot the remaining cream cheese in small chunks over the top of the cheese layer. Bake in the preheated oven for about 30 to 35 minutes or until the center is set and the top is golden brown.
  • Remove the egg bake from the oven and let it cool for a few minutes before serving. Cut into slices and serve hot.

How to Store & Re-Heat
If you have leftovers, allow the Egg Bake to cool completely. Then, transfer it to an airtight container or cover the baking dish tightly with plastic wrap or aluminum foil. Store it in the refrigerator for up to 3 days. When you're ready to enjoy the leftover Egg Bake, there are a few methods you can use to reheat it:
  • Oven: Preheat your oven to around 350°F (175°C). Place the Egg Bake in an oven-safe dish and cover it with foil to prevent it from drying out. Bake for approximately 15-20 minutes or until heated through. You can remove the foil during the last few minutes to allow the top to crisp up if desired.
  • Microwave: Place individual portions of the Egg Bake in a microwave-safe dish for a quick reheating option. Heat on medium power in 1-minute intervals, stirring in between, until thoroughly heated. Be cautious not to overcook as it may result in rubbery eggs.
📌Remember, the texture of reheated eggs may be slightly different from freshly baked eggs, but it should still be delicious. It's best to reheat in smaller portions to ensure even heating throughout.
