  • Preheat the oven to 250 degrees Fahrenheit (120 degrees Celsius). In a mixing bowl, whisk together the egg white, water, and vanilla extract until frothy.
  • In a large bowl, combine the granulated sugar, brown sugar, salt, and cinnamon. Toss the pecans in the egg-white mixture to coat them evenly.
  • Transfer the coated pecans to the cinnamon-sugar mixture and toss them to coat evenly. Place the coated pecans on a baking sheet, spreading them out into a single layer. Bake the pecans for 1 hour, stirring every 15 minutes to ensure even cooking. Allow the pecans to cool to room temperature, and then store them in an airtight container at room temperature.
