Easy Chipotle Tomatillo Salsa

One of the most popular salsas in Mexican cuisine is the tomatillo salsa, which features the tangy and slightly sweet flavor of tomatillos paired with spicy chilies and other savory ingredients. However, for those who love a little smoky and complex flavor, adding chipotle to the mix can take this classic salsa to the next level.

Ingredients
  

  • 1 lb Tomatillos , husked and washed
  • 3 Chiles arbol
  • 3 pieces Chipotle Peppers in Adobo Sauce
  • 1 Guajillo or New Mexico , remove steam
  • 2 garlic , peeled
  • 1 small onion , peeled
  • 1 teaspoon kosher salt , adjust to taste
  • 1 small Cilantro leaves , roughly chopped

Instructions
 

  • In a large skillet over medium heat, lightly toast the chiles de arbol and guajillo chili, being careful not to burn them, as this will make the salsa bitter. Set the toasted chiles aside. In a medium pot, add 8 cups of water and bring it to a boil. Add the tomatillos, 2 garlic cloves, onion, toasted chiles de arbol, and guajillo chili to the pot.
  • Reduce the heat to medium and let the ingredients simmer for 10-15 minutes or until the tomatillos are soft and turn yellow. Remove the pot from the heat and use a slotted spoon to remove the tomatillos, garlic, onion, and chilies from the water. Let it cool.
  • Transfer the mixture to a blender or food processor. Add the salt, canned chipotle pepper, and cilantro and blend until the mixture is smooth and well combined. Taste the salsa and adjust the seasoning as needed, adding more salt or canned chipotle pepper to your liking. Serve the salsa immediately or transfer it to an airtight container and refrigerate until ready to use.

To store Chipotle Tomatillo Salsa, transfer it to an airtight container and store it in the refrigerator. The salsa should last for up to 5 days in the refrigerator. Before serving the salsa, you can let it come to room temperature by taking it out of the refrigerator and letting it sit at room temperature for 10-15 minutes.
This will allow the salsa to warm up slightly and bring out its flavors. However, do not leave the salsa at room temperature for more than two hours, as this can cause harmful bacteria to grow.
