  • Add oats, milk, brown sugar, and evaporated milk to a blender and blend until smooth.
  • Add the oat mixture and simmer uncovered, stirring frequently until the oat mixture coats the back of the spoon, about 10 minutes, or until it reaches desired consistency.

  • Remove the cinnamon stick and divide the Atole de Avena evenly among serving mugs. Serve warm.

Notes

How to Store & Re-Heat
To store: Allow it to cool completely to room temperature. Transfer the leftover Atole to an airtight container and refrigerate it for 2 days.
To reheat: Pour the desired amount into a saucepan and gently warm it over low heat, stirring occasionally until heated. You can also reheat individual servings in the microwave by placing them in a microwave-safe mug and heating them in 30-second intervals, stirring in between, until warmed to your liking.
Make Ahead
Atole de Avena can be made a day ahead of time and stored in the fridge for up to 2 days. Then, when you're ready to serve, reheat the Atole on the stovetop or in the microwave; remember that Atole becomes quite thick under refrigeration, so you may want to thin it with some milk or water before reheating.
