Atole de Avena is a healthy and delicious Mexican oatmeal drink that is perfect for fall. This recipe for Atole de Avena is simple and can be easily made with just a few ingredients. You don't need any special equipment to make it!😉The oats and milk create a rich and creamy base, while the cinnamon, vanilla extract, and brown sugar add depth of flavor.
Add water and cinnamon stick to a medium-sized saucepan, cover, and bring to a boil. Lower heat and simmer for about 5 minutes.
Add oats, milk, brown sugar, and evaporated milk to a blender and blend until smooth.
Add the oat mixture and simmer uncovered, stirring frequently until the oat mixture coats the back of the spoon, about 10 minutes, or until it reaches desired consistency.
Remove the pot from heat and stir in the pure vanilla extract. Taste and adjust the sweetness with more brown sugar if desired.
Remove the cinnamon stick and divide the Atole de Avena evenly among serving mugs. Serve warm.

How to Store & Re-HeatTo store: Allow it to cool completely to room temperature. Transfer the leftover Atole to an airtight container and refrigerate it for 2 days. To reheat: Pour the desired amount into a saucepan and gently warm it over low heat, stirring occasionally until heated. You can also reheat individual servings in the microwave by placing them in a microwave-safe mug and heating them in 30-second intervals, stirring in between, until warmed to your liking.Make AheadAtole de Avena can be made a day ahead of time and stored in the fridge for up to 2 days. Then, when you're ready to serve, reheat the Atole on the stovetop or in the microwave; remember that Atole becomes quite thick under refrigeration, so you may want to thin it with some milk or water before reheating.
