Ingredients
  

  • 1-½ cups white whole wheat flour or whole wheat flour , spooned into a measuring cup and leveled-off
  • ¼ cup milled flax seeds or white whole wheat flour
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ½ cup honey or maple syrup
  • 2 large eggs , room temperature
  • cup avocado oil, Expeller-Pressed Sunflower Oil or vegetable oil
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • cup sour cream (preferably full-fat , or whole Milk
  • 1 cup very ripe mashed bananas , about 2 to 3 bananas

Honey Glaze:

  • Preheat the oven to 350 °F (176.67 °C) and set an oven rack in the middle position. Line a 9×5-inch loaf pan with parchment paper or grease with non-stick cooking spray.
  • In a medium bowl, whisk together the whole wheat flour, milled flax seeds, cinnamon, baking powder, and baking soda. Set aside.
  • In a large bowl, whisk together the honey, eggs, oil, and vanilla extract. Add the sour cream, lemon juice, and mashed banana and whisk until smooth.
  • Using a rubber spatula, fold the dry ingredients into the wet ingredients until combined (do not over-mix). Pour the batter into the prepared loaf pan.
  • For the Honey Glaze:
  • In a small saucepan, place the honey and the water; simmer until the honey dissolves entirely and thickens a bit, about 5 minutes. Remove from heat and stir in the vanilla extract; let it cool.
  • Bake for Whole Wheat Banana Bread for 50 to 55 minutes, or until a toothpick inserted into the center of the bread comes out clean. Remove from the oven brush immediately with the honey glaze. Cool in pan 5-10 minutes, then turn out onto rack. Slice and serve while still warm or store in an airtight container. Enjoy!!!

How to Store & Re-Heat
  • To store: Once the bread has cooled completely, wrap it tightly in plastic or aluminum foil and store it at room temperature for up to 3 days. Alternatively, you could store it in an airtight container in the fridge for up to 5 days.
  • To reheat: Whole Wheat Banana Bread, you can microwave or reheat it in the oven. For the microwave, place a slice of bread on a microwave-safe plate and heat it for 10-15 seconds until warm. For the oven, preheat the oven to 350°F (175°C), wrap the bread in aluminum foil, and bake for 10-15 minutes until warm. You could also slice the bread and toast it lightly in the toaster oven.
