  • Preheat the oven to 400 degrees F and line (2)  13'' x 18''x 1'' baking sheet with parchment paper (or use a nonstick baking sheet). Pile the minced garlic on one side of the board and sprinkle with kosher salt. Tilt the knife at a 30-degree angle to the board and drag it over the garlic, scraping it across the surface of the board until the garlic is a smooth paste; set aside.
  • Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. Put the garlic potatoes wedges into a large bowl.
  • In a small bowl, whisk together the herbs, garlic paste, paprika, ground black pepper, and oil until blended, and then pour over the potatoes. Sprinkle the flour over the potatoes and toss until the potatoes are thoroughly coated. Spread the potatoes out on the prepared baking sheets, being sure to leave space in between the wedges.
  • Bake the garlic potato wedges for 30 to 35 minutes, turning to the other cut side after 20 minutes. Bake the Garlic Potato wedge until they are lightly browned, crisp outside, and tender inside.
