Ingredients
  

For the Meat:

  • 2.20 lbs (1000 g) Pork shoulder *(no more than 35% fat)

  • Grind meat with a ⅜” (10 mm) plate. Mix meat with all ingredients, including water. *(Pinch off a small piece of the sausage and cook it in a frying pan let it cool and taste to see if the seasoning is to your taste)
  • Stuff into 32 - 36 mm hog casings and tie into 5” (12 cm) links. Alternately, shape into patties. Cook sausage in the usual manner, making sure the internal temperature of the sausage links reaches at least 150 degrees F. Recommended for frying or grilling.

How to Store & Re-Heat
To store cooked Italian Sausage, refrigerate it in an airtight container for up to 3-4 days or freeze it for longer-term storage. To reheat, you can pan-fry, grill, or microwave it. Ensure the internal temperature reaches at least 165°F when reheating to ensure it's safe to eat.
Make-Ahead
To make Italian Sausage ahead of time, prepare the sausage mixture as directed in the recipe and store it in an airtight container in the refrigerator for up to 2 days. When ready to cook, stuff the sausage into casings and cook as per the recipe instructions.
How to Freeze
To freeze Italian Sausage, portion it into airtight freezer-safe containers or bags, removing as much air as possible to prevent freezer burn. Seal tightly and label with the date. Store in the freezer for up to 2-3 months. Thaw in the refrigerator before cooking.
