Ultimate Reese's Brownies with Peanut Butter Frosting recipe. If you're obsessed with Reese's Clusters, as my family is ( they love Reese's Clusters😍, they could eat an entire bag, and so do I🙊! The ratio of pecans to chocolate, caramel, and peanut butter is just so good!!!! Ummm… With that, let me introduce you to these Reese's Brownies!

Ingredients
  

For the Brownies:

  • 1 stick (½ cup) unsalted butter
  • 2 cups semi-sweet chips
  • ¼ cup chopped Reese's Clusters reserved
  • 8 whole Reese's Clusters , reserved
  • 1 cup light brown sugar
  • 1 tablespoon vanilla
  • 4 eggs , room temperature
  • 1 cup all-purpose flour , spooned and leveled off with a knife
  • teaspoon kosher salt
  • 2-3 chopped Reese's Clusters for topping (optional)

For the Frosting:

  • 4 ounces cream cheese softened
  • 4 tablespoons unsalted butter softened
  • ½ cup creamy peanut butter
  • ¾ cup to 1cup powdered sugar
  • 1-½ to 2 tablespoons heavy cream or milk , if needed.

Instructions
 

  • Preheat the oven to 350 degrees F. Line a 9-by-13 straight-sided baking pan with parchment, letting the parchment hang over the long sides by about 2 inches (this will help you remove the bars from the pan later). Spray all the parchment, including the exposed ends, with non-stick cooking spray. Set aside
  • Melt together the butter and the chocolate chips in a medium bowl over simmering water. Allow cooling slightly. In a large bowl, stir (do not beat) together the eggs, salt, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow it to cool to room temperature.
  • In a medium bowl, sift together the flour; toss the reserved chopped Reese's Clusters. Add to the cooled chocolate mixture and mix until just combined. Spread half the batter in the prepared pan and align Reese's Clusters (whole) for a total of 8 or more 😏 on top. Then top with the remaining batter. Bake for 30- 35 minutes or until set. Do not overbake! Let Reese's brownies cool completely before frosting.

For the Peanut Butter Frosting:

  • Beat the peanut butter, butter, and cream cheese with a hand or stand mixer on medium speed until light and fluffy. Slowly add the confectioners' sugar and continue to mix until the frosting is smooth. Mix in the milk and continue to mix until it reaches a good spreading consistency.
  • Gently spread the frosting over the completely cooled brownies and sprinkle some chopped Reese's Clusters over the top, if desired. Chill for 1-2 hours until firm. Slice into bars. Refrigerate The Ultimate Reese's Brownies with Peanut Butter Frosting in an airtight container for up to 3 days. Enjoy!

How to Store & Re-Heat
To store: First, allow them to cool completely to room temperature. Once cooled, wrap them tightly in plastic or aluminum foil and store them in an airtight container or zip-top bag at room temperature for 3-4 days. Alternatively, you can keep them in the refrigerator for up to a week or in the freezer for up to 3 months.
To reheat: You can try a few different methods. One is through a microwave. First, place a single brownie on a microwave-safe plate and heat it for 10-15 seconds until warm. Another is via Oven, where you reheat your oven to 350°F (175°C) and place the brownies on a baking sheet. Bake for 5-10 minutes until heated through.
Make-Ahead
To make the brownies ahead, make them according to the recipe instructions. Allow the brownies to cool completely to room temperature. Wrap the brownies tightly in plastic wrap or aluminum foil and store them in an airtight container or zip-top bag. Refrigerate the brownies for 3-4 days, or freeze them for up to 3 months. When you're ready to serve the brownies, remove them from the refrigerator or freezer and allow them to come to room temperature. To reheat the brownies, follow the instructions in the "How to Store & Reheat" section above.
How to Freeze
To freeze, allow the brownies to cool completely to room temperature. Cut the brownies into squares or the desired portion size. Wrap each brownie tightly in plastic wrap or aluminum foil. Place the wrapped brownies in an airtight container or a zip-top freezer bag. Label the container or bag with the date and contents. Place the container or bag in the freezer and store for up to 3 months.
To thaw the brownies, you would Remove the desired number of brownies from the freezer and allow them to thaw at room temperature for 1-2 hours. To reheat the brownies, follow the instructions in "How to Store & Reheat".
