  • 1 Tbs. Chili oil
  • 2 cloves garlic , chopped
  • 2 teaspoon sugar
  • 2 tsp. Freshly grated ginger
  • 5 Green onions , chopped
  • 12 oz. Mix protein chicken , beef, and shrimp
  • 3 eggs , beaten with ½ tsp. ground black pepper and a small pinch of kosher salt
  • 3 cups Cold/day old Jasmine rice
  • 1 tbsp. Soy sauce
  • 4 tsp. Sambal (ground fresh chili paste) or chili garlic sauce
  • 4 tsp. Chili oil with chili flakes
  • 1 onion , chopped
  • ½ frozen carrots and peas
  • 1 tbsp. mushroom flavor dark soy sauce , optional

Instructions

  • In a small bowl mix, sugar, soy sauce, mushroom soy, sambal, and chili oil with chili flakes. Set aside, heat a 14-inch wok over high heat, swirl in one tablespoon of the cooking oil to coat the pan.
  • Add shrimps in a single layer and cook for about 30 seconds. Turn and cook for another 20 to 30 seconds or just until the color changes to pink. Remove from pan and set aside.
  • Swirl in one more tablespoon of cooking oil and 1 tablespoon of chili oil to coat the pan. Add garlic, onion, ginger, and stir-fry until its fragrance’s released.
  • Add the beef and chicken, cook until they are nicely browned and cooked, or reach the desired doneness. Add carrots and peas, cook for a minute.
  • Push all ingredients into one side of the wok and make room for the eggs. Add in beaten eggs and scramble, but don't mix with other ingredients yet. When the eggs are fluffy and nicely cooked, toss to integrate with all other ingredients in the wok.
  • Stir in rice, cooked shrimp, and spicy sauce, keep stirring, and tossing the Fried Rice Combo until every grain of rice of the Fried Rice Combo is evenly coated with sauce. Toss in chopped green onions into the Fried Rice Combo. Remove the Fried Rice Combo from heat. Enjoy our Fried Rice Combo!

Notes

How to Store & Re-Heat
To store: Let it cool to room temperature, then transfer it to an airtight container and refrigerate it for up to four days.
To reheat: Reheat the leftovers in a skillet or wok over medium-high heat until heated, occasionally stirring to prevent sticking. You can also reheat the leftovers in the microwave by placing them in a microwave-safe dish and heating them on high for 1-2 minutes or until heated through. Remember that rice can dry out in the refrigerator, so you may need to add a splash of water or broth when reheating to keep it moist. It's important to ensure that the leftovers are heated to an internal temperature of 165°F (74°C) to ensure food safety.
Make-Ahead
For a make-ahead preparation of the spicy fried rice combo, cook the protein and rice and chop the ingredients in advance. Store them separately in the refrigerator. When ready to cook, follow the recipe, incorporating the pre-cooked elements and stir-frying with the sauce until heated. Toss in green onions, remove from heat, and serve. Enjoy the convenience of pre-prepared ingredients for a quicker cooking process.
How to Freeze
To freeze the Spicy Fried Rice Combo, let it cool completely and transfer it to an airtight container or freezer-safe bag. Label with the date and contents, then freeze for 2-3 months. When ready to enjoy, thaw in the refrigerator overnight, reheat in a wok or skillet over medium heat, and serve hot. Properly freezing and reheating ensures convenient meal prep without compromising the flavors and texture of the dish.
