Salsa verde (Salsa Verde Mexicana) is a classic green sauce made with cooked tomatillos, green chiles, garlic, onion, and cilantro. It has a tangy, slightly spicy flavor and is commonly used for tacos, enchiladas, quesadillas, and many traditional Mexican dishes.

Cook chiles and aromatics: Bring water to a boil; add the jalapeños, serranos, onion, and 1 garlic clove. Cook for 15 minutes, until softened.
Cook the tomatillos: Add the tomatillos to the hot water. Cook just until they begin to turn slightly yellow, being careful not to let them burst. Turn off the heat and let them continue cooking in the hot water. Let everything cool.
Blend chiles and part of the tomatillos: Transfer the cooked chiles, onion, cooked garlic, ½ raw garlic clove, salt, and some of the tomatillos to a food processor or blender. Blend until smooth, then transfer to a bowl.
In a food processor: Blend the remaining tomatillos with a small amount of the cooking water until thick. Add the cilantro and blend just until incorporated.
Combine and adjust: Add the tomatillo mixture to the chile mixture. Stir well, taste, and adjust salt if needed. The salsa should be thick.
Serve: Serve this salsa verde with tacos or quesadillas. To use it for enchiladas or stews, first fry the sauce in a bit of oil to deepen the flavor and thicken it.
Storage: Store salsa verde in an airtight container in the refrigerator for up to 5 days.
