Almibar

Jump to Recipe

Almibar (Simple syrup) is a sweet liquid made by dissolving sugar in an equal amount of water. It can be infused with different flavors to enhance drinks, desserts, and pastries.

The ratio of sugar to water may vary depending on how sweet or flavorful you want the syrup to be, or the type of cake or pastry it will be used on.

How to Make Almibar

Note: The full instructions are provided in the recipe card below.

  1. Combine the sugar and water in a saucepan and stir to ensure all the sugar is moistened.
  2. Bring to a boil, stirring to dissolve the sugar. Store covered in the refrigerator until needed.

Camila's Tips & Variations

  • Almíbar de café (Coffee simple syrup): After the sugar and water come to a boil, add 1 oz/30 g ground coffee. Remove the pan from the heat, cover, and steep for 20 minutes-strain to remove the grounds.
  • Almíbar con licor (Liqueur-flavored simple syrup): To flavor simple syrup with a liqueur such as framboise, kirsch, or Kahlúa, add 4 oz/110 g of the desired liqueur to the syrup after it has cooled completely.
  • Almíbar simple con licor (Liquor-Flavored Simple Syrup): To flavor simple syrup with a liquor such as brandy or rum, add 2 oz/60 g of the desired liquor to the syrup after it has cooled completely,
  • Almíbar de vainilla (Vanilla Simple Syrup): After the sugar and water comes to a boil, add 1 vanilla bean, split and scraped. Remove the pan from the heat, cover, and steep for 20 minutes-strain to remove the vanilla bean pod.

    Notes

How to Store: Simple syrup can be stored in a clean, airtight container in the refrigerator for up to a month. However, it is essential to let the syrup cool to room temperature before transferring it to the container and refrigerating it. If the syrup is not allowed to cool before being stored, it can cause condensation in the container, leading to spoilage or bacterial growth.
